Whoa, Mofo.

So!  As a lot of you probably know, Vegan Mofo starts today.  And I, as usual, am completely unprepared, so I’m just going to ramble a bit and we’ll see where this goes.  The reason I’m unprepared (this time) is that the semi-vegan (no longer an omnivore!) boyfriend and I just moved into a house.  Like 2 days ago.  Anyone who has ever moved knows how crazy and stressful that process is.  As a result, not only am I plum tuckered out, I haven’t been cooking.  Slap my wrist.  I deserve it.  I cooked a lot leading up to last week.  In fact, I have a cookbook review that will be here tomorrow (so come on back here to the disorganized world of awesome and rad vegans to check that out).  But it just was not possible last week.  I bought these stupid white eggplants, since I forgot about not having time to cook.  I think I might make eggplant bacon out of them tomorrow.  Ramble, rumble.

Here’s some things that saved me this week:

Pizza.  (Image credit. no, I don’t even have time to take my own pictures, deal with it.  [gah, I swear this is going to get better in a couple of days when things die down.])  I work at a pizza place.  I also ate a lot of salads and spaghetti from there this week.  You do what you can, amirite?

This place.  They just opened this past week, lucky for me, and they have a vegan burrito!  With tofu and homemade kimchi and stuff!  They also switch out the meaty stuff with tofu if you ask nicely (although apparently the kitchen staff wasn’t happy about that tonight).  There is also a really nice (albeit expensive) range of beers on tap.  Which leads me to…

Booze.  (image)  When you’re moving, you need a lot of it.

Breakfast of busy champions.  Add an apple and you’re golden.  Oh, and bagels, I have eaten some bagels for breakfast this week.

And my eyes just blurred out from the tired sinking in, so…I’m going to go with image number three and watch my 109th episode of Charmed (on Netflix instant?  Anyone else watching from the beginning?  For old times’ sake?  Just me?) and eat the second half of my burrito from Black Sheep and sleep.  Tomorrow my brain will be functioning properly and I will go grocery shopping and I’ll finally review that cookbook and make some eggplant something or other and generally be an all-around better person.  I promise.

    I’m watching Bones from the beginning on Netflix. It’s a perfect scam…they put up shows that we love and then we don’t leave when they hike the cost. I didn’t know they’d put Charmed up…looks like I’ll be keeping Netflix awhile longer… 🙂

    Please let us know how your eggplant turns out! I have a bunch of eggplants from my CSA, and I don’t know what to do with them …

    I know what it’s like to move house and then sleep the whole of the next day from tiredness. You may think I am not being literal, but… I shit you not.

    By the by, I’m so glad you’re back to blogging. I’ve always loved your photos and writing style, but I am too rad and disorganized (hello, friend!) to say so. Okay, so I’m a bit bashful too.

    Moving house is a nightmare! I’ve done this 4 times in 3 years and hate it even more. Hope you have things settled down soon 🙂 And Happy Vegan MoFo!
